Why the Rainbow Bagel is the new 'it' food that everyone in New York is talking about

And there's not a #cleaneating tag in sight...

We’re used to a rainbow of colour on the plate being a sign of a healthy diet. Search the hashtag #rainbowfood on Instagram and you’ll find vibrant salads of sweet potato, heritage tomatoes, beetroot, avocado and mango.

Now, among the spinach and blueberries, there is the odd bagel. And #cleaneating will not be tagged.

Cronut shmonut. The new “It” baked good is the Rainbow Bagel.

Scot Rosillo, of The Bagel Shop in Brooklyn, New York, calls himself “the world’s premier bagel artist” — and in a city which is not short on bagels, it is his trippy tie-dye creations that have captured the internet’s attention.

A video of the intricate process of layering differently-dyed doughs and rolling bagels went viral last week like some kind of mesmerising Fantasia-esque sequence.

Forget smoked salmon; the Rainbow Bagel is made to be sandwiched together with the shop’s signature “Funfetti” cream cheese.

made by unicorns under the employment of Hello Kitty is the perfect antidote to the depths of a grey winter. Surely won’t be long before rainbow bagels arrive in London.

But for the time being we will have to make do with Blue Top Ice Cream, which has a green Matcha-flavoured ice cream topped with Lucky Charms, while the Hummingbird Bakery has a Rainbow Cake, which looks run-of-the-mill until you slice it to reveal perfect vibrant layers of sponge.
