The drink: Turning Over a New Leaf

What’s in it? 30ml lapsang-infused Tanqueray London Dry gin, 30ml Chambord black raspberry liqueur, 15ml lemon juice, and 15ml gomme syrup, all shaken with egg white.

Why should we try it? Nothing says spring like turning over a new leaf, or the taste of this fruit gin cocktail. The sweet berry notes and sugary syrup are balanced out by the smokiness of the lapsang-infused gin and the final bitter cut from the sharp lemon and the egg white lends a frothy texture.

Ingredients are inspired by those that were rationed in 1940s London; tea, lemon and eggs transport you back to the time of making the best of what you’ve got — and boy have they made the best. This simple wartime-inspired drink is light, fruity and totally moreish; tea lovers, you’re going to want a piece of this.

Where do we get it? Based on an old air raid shelter, London's hottest new 'secret' spot Cahoots is all dressed up in 1940s London Underground gear. This place is all about the detail, from the vintage newspaper print menus and retro tube maps to the original TfL seats. You won’t find any proper frontage outside; just follow the “to the trains” signs, chat up the ticket inspector and you’re in. With an old tube carriage and a mock air raid shelter alcove to hide in, you could lose your whole day and night to vintage nostalgia; just keep it under your hats.

Who do we ask for? Cahoots’ Bar Manager Filippo Previero not only created this tea-based goodness but a whole menu of war-inspired twists on the classics to boot.
