As well as giving us a gripping hour of great telly to watch, there’s an added bonus to tuning in to MasterChef: The Professionals – getting to see how expert judges Monica Galetti and Marcus Wareing prepare classic dishes.

In this week’s skills test, the intense first-impressions round that sees each hopeful have to prepare a prescribed dish in 15 minutes, Galetti tasks the contestants with making a Crêpe Suzette.

The iconic French dish consists of fresh golden pancaked and an orange caramel sauce, giving off a mix of fruity, sugary and alcohol-infused flavours.

“Sounds simple, but as we know nothing’s simple in this kitchen,” Wareing warns.

First up, Galetti makes a batter for the crêpe, judging her measurements by sight (“the sort of thing your mum used to do,” says Wareing) as she mixes flour, sugar, eggs, and milk together for a runny consistency.

Deciding that flipping her pancake is “too much pressure”, Galetti turns it by hand until it’s golden brown on each side.

Then it’s time for the sauce – sugar, caramelised on a high heat, with butter, orange juice, and a hit of liqueur once it’s reduced down. Dipping the crepes back in the liquid, Galetti ensures they’re well-covered before plating up and topping off with fresh oranges.
